Our culinary excellence stems from the concept of ‘Farm to Fork’. The food is made fresh with no additives, preservatives, synthetic flavors or colors, and as nature meant for it to be, pure and natural. We have nurtured 3 bio-gardens within our property where we try to meet our in-house needs of vegetables and fruits. This ensures that the food we are serving is made from the freshest ingredients which are seasonal, and are harvested when they taste the best. This also reduces the carbon footprint that occurs during the harvesting, washing, shipping and distribution of food.
We grow spices such as cardamom, pepper and turmeric. All the coffee served at Ibnii comes from our expansive 40 acre coffee plantation. Ask our Front Office team in case you want to purchase any of our produce showcased at Almari.
We often fill our meal plates with dishes that we don’t end up eating. Our “Weigh the waste” initiative is to curb and minimize food waste at the buffet. We encourage our guests to adopt conscious eating habits, by taking food which they can finish comfortably.
To enable this drive to a more meaningful purpose, we weigh the leftovers from guest plates (charged at the rate of Rs. 100 per 10 gm of wasted food) and donate the money collected from guests to a non-for-profit organization that feeds children at an orphanage.
This should not be interpreted as a constraint; our intent is to grow awareness & amplify adoption of conscious and mindful eating habits.
We aim to reduce the use of all plastics while promoting reusable, recyclable and more environmentally friendly materials. You would find filtered water in Glass bottles throughout the resort, usage of in-shower dispensers for shampoo, bodywash, hand wash and moisturizer, no plastic containers/cups/straws/clingwraps in kitchen, bar or restaurants, limiting the usage of plastic and adopting alternatives that are truly environment friendly
We segregate our wastes into Biodegradable and Non-Biodegradable. We employ a simple and innovative waste management and composting system that converts food waste into useful compost for coffee plantations and bio-gardens.
All the Non-biodegradable waste collected is segregated into three types; mainly Paper, Plastic, and Metal. The waste is segregated accordingly and is sent to an NGO we have tied up with in Mysore, called ‘Hasirudala’, where they recycle and divert the garbage from ending up at landfills. The sanitary waste collected at Ibnii is disposed of by burning it in our incinerators.
